Summer Squash Casserole -- Made for Stampers By Design Summer Bash 2008
Preheat oven to 350
Preheat oven to 350
Spray a 12"x7"x2" Dish (glass works best) with a cooking spray (I use Pam)
2-3 lbs sliced summer squash
1/2 cup chopped onion
1 cup shredded carrot
8 oz package stuffing (I use Stove Top)
1 can cream of mushroom or celery or chicken
1 cup sour cream
1/2 cup melted margarine or butter
Steam summer squash and onion until almost tender. Pour into a bowl.
Mix soup, sour cream and carrots together in a separate bowl.
Gently fold the mixture into the squash and onions.
Mix stuffing with the melted butter. Put half into the bottom of your baking dish.
Spoon squash mixture on top and then put the other half of the stuffing on top of that.
Bake until squash is tender and the mixture is bubbling.
